Just another day, the sun dun slipped away

Hello Friends!
It has been much too long since I last blogged.


I have been traveling to MT for the last two months. I am now back trying to get into the swing of things again.


But at this moment I am sitting in my house listening to Grace Potter and the Nocturnals, making some chili on this cold night before my wonderful husband gets back home.


My lovely sister LAURA FORD who is an amazing cook showed me this wonderful recipe for Vegan Kasha Chili super good especially for a cold night at home.


What you will need for
LAURA'S VEGAN KAHA CHILI :

  • 1 white or yellow onion
  • 1 pepper
  • 1 can of kidney beans
  • 2 cans of diced tomatoes
  • 3 cups of water
  • 1 package of vegetarian chili mix (i like spicy)
  • 1/3 cup of kasha



Ok so first dice the onion and saute it in a little bit of olive oil for about 3-4 min. Then dice the pepper and add to the onion and saute for another 3-4min.
 Drain and rinse the kidney beans then add beans and tomatoes (with juice).
Boil 3 cups of water and mix in chili seasoning, then add to the chili. Bring the chili to a boil 
then turn down to med/low and simmer for 20 min. 




Last add the Kasha and let simmer for another 10-15min.






And there you have it, Laura's Vegan Kasha chili.....


Now all you have to do is wait for your husband to get home to eat it :-)

    also, where do you get kasha? whole foods?
