I want cold

I am super excited about fall and winter...hopefully it will come soon because I am already cooking fall foods.
What comes to mind when you hear someone say potato soup? My first thoughts are cheesy, buttery, and lets just say a little fatty. I have never been a fan of potato soup. But I decided to make some from www.ivu.org. (IVU stands for International Vegetarian Union.) Anyway it sounded good and it's vegan which is even better.


You will need:
3-4 medium potatoes, peeled and cubed
1 medium onion, chopped
1 1/2 cups chopped celery
1 clove garlic, minced
2 TBS olive oil
2 cups water
2 cups rice milk
3 TBS flour
sea salt
freshly ground black pepper


Heat the oil in a soup pot.
Add the onion, celery, and garlic - saute until tender

Stir in the potatoes and water, cover, and simmer for 15 minutes.

Then add the (I used Whole Wheat Flour) flour to 1/2 cup of rice milk and stir well.
Add the rest of the rice milk in with the other ingredients.
Stir the soup constantly over a medium - high heat until it becomes thick and bubbly.
Add a generous amount of sea salt and freshly ground black pepper to taste.

And there you have it: Potato soup that your taste buds will enjoy and it will be nice to your tummy.

What does your breakfast look like?

Hello friends
You haven't seen me for a week...I've been busy.
Last week Garrett and I went to Little Rock AR to hike pinnacle Mountain. He has all the pics on his camera and we lost the chord but when we do find it good pics will come. Least I took a few with my camera.
Before we left for AR I decided to make these very tasty pancakes by Joy the baker.

Vegan Jam Swirled Pancakes

Just disregard the potatoes in the background. 
I ended up using Cascadian Farms Organic Blueberry Jam.
Garrett loved them so that was a good sign.

So i love breakfast. Here is something good and easy for breakfast if you are on the go.
Green Machine Smoothie

What you will need:
A blender.
1/2 cup of rice Milk or any other kind you want.
2 bananas 
A handful of spinach
Handful of ice
and a tablespoon of ground up flaxseed.
Just throw it all together in the blender and you have a tasty smoothie.
I know it sounds weird and looks weird but it is really good and really good for you. Just think of Popeye

Friday Morning!

Today is a little different because I want to be one the of the cool kids and start a blog. I don't always have the correct words or right things to say but I thought it would be fun.

Garrett is off to school so I do what I do every morning....drink my coffee with just a tad bit of SO Delicious Coconut milk creamer. I am also loving these pear preserves that Garrett and I bought at the Memphis Farmers Market.

We originally bought them for my parents because my dad is in love with them. So I decided to try them to make sure they are ok to eat. I just need me a piece of ezekiel bread, toast it with a little earth balance butter and pear preserves. Very delicious!

So I love to cook and I love sweets. It has been a little difficult to always find sweets with a vegan recipe, but I just recently purchased my copy of Baby Cakes NYC. It is a bakery in New York City and everything they bake is vegan and super good.

Right now my goal is getting through the whole book. I just recently made the apple pie...first time to make a pie and it turned out great!
When Garrett and I were sick a few weeks ago I made the Cornbread to go along with our chicken noodle soup which was very good.

It is a very fun and easy cookbook not to mention everything I have made so far has been delightful!

Ok that's all i got for today.
I'm going to make me another cup of coffee and listen to Monsters of Folk...very good band!
